It's finally time for Gourmet Guys To The Rescue - to benefit the Rescue Mission of Utica.  I've created a dish for The Eagle's table at the event - CJ's BBQ Skins.  Think of it as a loaded potato skin, loaded with a whole barbecue dinner!

It starts with the "potato skin" - for this I used a half a salt potato for the perfect bite-sized sample.  I load it with a little shredded cheddar cheese and a few kernels of cooked corn.  Then fill it with some pulled pork, add a dollop of sour cream and some chives on top.  I'll be pulling this recipe out again for every upcoming event I can think of.  Be sure to stop by our table and say hi...and try a BBQ Skin!
