How important is that 'best by' date on bread? Is it gross to eat bread after that date?

This all started the other day with a loaf of bread in fridge, that was a little past its date. But it didn't look like there was anything wrong with it - It wasn't moldy or hard (besides being cold). So was it still safe to eat?

Apparently, the 'best by' date isn't so strict. It depends on what type of bread we're talking about, as well. According to Ask.com,

Bread can be eaten past the "best by" or expiration date. A package of plain bread can last five to seven days past the best by date. Bakery bread has a shorter lifespan of two to three days past the best by date.

But what if it's even older than that? What if it's like two or three weeks after the 'best by' date? After looking at countless sites, no place seems to recommend eating expired bread past one week. Does that mean you can't? Of course not. You can do whatever you want, but if you do feel a little 'funny,' it's your own fault.

Or just buy less bread so this situation doesn't even come up.
