Make nachos more special with the addition of seafood and fresh vegetables.  Baked at 350 degrees until the cheese is melted and seafood heated through also makes the tortilla chips nice of warm. But if you don't want to heat up the house or oven, you can microwave the whole dish for about 2 and a half minutes.

Depending on how many people are sharing, this could be an appetizer, snack or, with the all the fish and vegetables, it could even make for a meal.

Seafood Nachos (prep. time 15 minutes microwave, 20 minutes bake. Serves 6 for snack or appetizer)

1 ripe tomato, diced

3 stalks green onion, sliced

4 Tb. diced (or snipped) chive

5 oz. imitation crab

4 slices American cheese, Julianned

1 C. shredded Colby-Jack cheese

1/2 can sliced black olives

2 tsp. paprika

sour cream and salsa on the side
