The Sotol process starts in the Mexican region of Chihuahua, where wild agave mature for 15 years before they are harvested by natural selection. 15 years! The agave is steam cooked for 72 hours in a clay oven, and then fermented with champagne yeast. From there it is aged in new French white oak barrels before being bottled in a handmade bottle.

Ingredients: 1 1/2 oz Sotol Hacienda De Chihuahua Plata Silver, 1/2 ozBlue Curacao liqueur, 1/2 oz lime juice.

Directions: Moisten the rim of cocktail glass with a lime wedge, and dip in salt. Combine tequila, blue curacao, and rose’s lime juice in a shaker half-filled with ice. Shake well, and strain into the cocktail glass. Garnish with a lime wedge, and serve.
